Turkey Mole

Serves 4

Ingredients

  • Use your Thanksgiving leftover turkey (a few slices per person is about right)
  • 1 tablespoon chipotle flavored olive oil
  • 2-3 tablespoons very good quality mole powder (I make my own or I use a blend from Mountain Town Olive Oil imported from San Pedro on the outskirts of Mexico City…click on the link HERE to visit their website.  They ship!!)
  • ½ cup chicken or turkey stock
  • 1 tablespoon toasted sesame seeds

Directions

Gently reheat your turkey.  You may want to add a bit of turkey or chicken stock if the pieces are already sliced to help keep the meat moist.

Warm the oil in a medium pan over medium heat.  Add the mole powder and cook for just about a minute to let the spices bloom.   Add in the stock and stir to combine with the mole powder.  Let it come to a simmer, it will thicken.  You can add a little more stock to taste as it thickens to make sure it is the consistency you like.  I prefer mine on the thinner side. 

Put a few spoons of the mole on the bottom of your serving dish.  Top with your warmed turkey and then drizzle a bit more of the sauce over top being careful not to drown the meat in the sauce.  You can serve more on the side if you like.  Garnish with toasted sesame seeds.
